Ingredients
- For the Steak Bites:
-
1.5 lbs sirloin or ribeye steak, cut into bite-sized cubes
-
Salt and pepper, to taste
-
1 tsp garlic powder
-
2 tbsp olive oil
-
2 tbsp butter
- For the Tortellini Alfredo Pesto Sauce:
-
18 oz cheese tortellini (refrigerated or fresh)
-
1 tbsp butter
-
3 cloves garlic, minced
-
1 cup heavy cream
-
¾ cup grated Parmesan cheese
-
½ cup shredded mozzarella cheese (optional)
-
¼ cup basil pesto (store-bought or homemade)
-
Salt and black pepper, to taste
-
Fresh parsley or basil, for garnish
Instructions
Step 1: Bring a large pot of salted water to a boil. Cook the tortellini according to package directions until tender. Drain and set aside.
Step 2: Season the steak cubes with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer and sear for 2-3 minutes per side, until browned and cooked to your liking. Remove and set aside.
Step 3: In the same skillet, reduce heat to medium and melt 1 tablespoon of butter. Add minced garlic and sauté until fragrant, about 1 minute.
Step 4: Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and mozzarella, allowing it to melt completely. Add pesto, then season with salt and pepper to taste.
Step 5: Add the cooked tortellini to the sauce and gently stir to coat. Fold in the steak bites. Warm everything together for 1–2 minutes. Garnish with parsley or basil before serving.
